Pesto
The simplest - and maybe best - pasta sauce there is.

- 1 clove garlic normal sized
- 1 bunch fresh basil about two cups
- 35 g pine nuts
- 100 g parmesan cheese grated
- 2 tbsp olive oil extra virgin
Pestle and mortar-style:
Pound the garlic in the mortar with some salt
Pick and roughly chop the basil leaves before you add it to the mortar and pound it to a paste.
Add the pine nuts and half the cheese - more bashing.
Drizzle in some oil, then the rest i the cheese.
Pound until you get a smooth paste. Season with salt and black pepper
