Mushroom and spinach tagliatelle

A very easy, tasty and vegetarian pasta dish - made in just a few minutes!

Ingredients

  • 500 g tagliatelle fresh
  • 3 tbsp olive oil
  • 3 cloves garlic
  • 400 g mushrooms
  • 300 g spinach
  • 1 onion
  • 1 dl broth vegetable
  • 2 tbsp soy sauce
  • 2 tsp lime juice
  • 1 bunch parsley
  • 50 g pine nuts
  • 1 tsp smoked paprika

Instructions

  • Get ready to cook the pasta. Follow the cooking instructions on the package, and start cooking in time to have the pasta prepared for step 7.
  • Heat a pan to medium heat and toast the pine nuts. Do not use any oil. Remove and set aside.
  • Heat the olive oil in the pan. Chop mushrooms and onion. Add them to the pan and let them cook until slightly brown. Depending on mushrooms, you might have to add them to the pan before you add the onion to get the right colour on both. This will take 3-7 minutes
  • Add the chopped garlic and cook for half a minute
  • Add soy sauce and some vegetable broth. Reduce the heat and cook for a couple of minutes.
  • Add the spinach and cook until the spinach has wilted. Add black pepper and some lime juice.
  • Drain the pasta and add to the mushroom-spinach pan. Combine. Season to taste. Sprinkle over some parmesan and toasted pine nuts.
